Why does my iBook run faster with a relatively clean install (few new programs installed, if any) and without updates? Is there any specific reason for this? I think I'm going to reinstall my OS X and disable updates again for the reason of sheer responsiveness.

I could be that more processes are loaded into your memory. Process that come with the updates, or ones you install… Idono, though. People seem to complain about the same thing with all OS.

fresh install = no extraneous software needing to load at boot = more RAM free at any given time, also less processor cycles needing to be spent on invisible processes. Think of it like a car - the more weight you put in it, the slower it will accelerate.
