If I wanted say, a new processor, can I just open up my box, take out the old one, and put a new one in? Or are there infinite combinations/specifications/compliance issues that would stop me from attaching random part X to random part Y?

All you need is the right socket number for your motherboard.
Intels are commonly socket 775
and AMD are usually AM2.
Make sure you have the right socket!

Oh and for other things make sure it's compatible with the right slot! Some video cards use PCI-E, some use PCI, hell some even use AGP still, just make sure your motherboard has the slots required for new parts.

@69,057Is static frying your parts really as big a risk as people make it out to be?

Yes, it is a big deal, but only if you're a complete idiot. If it happens, it's toast, but it's not too hard to prevent. Simply ground yourself by keeping a body part touching the metal computer box. That's it.

Are AMD or Intel processors better? Or is it just personal preference?
